Patrick Lesec describes proprietor Jean-Ives Bizot as a true radical — as
someone totally committed to ultimate quality who is willing to take chances
in his winemaking to make the best wine possible. Jean-Ives has borrowed
ideas from his neighbor, Henri Jayer, and works closely with Patrick Lesec
for his élevage. The jovial Jean-Ives takes the practice of non-interventionist
winemaking as far as he can to preserve the pure flavors of his fruit and
the character of his terroir in Vosne Romanee.
Jean-Ives is a practitioner of lutte raisonée agriculture and uses little
to no synthetic fertilizers or pesticides. He keeps his yields low and picks
at maximum ripeness. His vineyards range in age from 15-40 years of age.
Jean-Ives ferments whole clusters, generally not destemmed, with indigenous
yeasts and little to no chaptalization. He uses little to no SO2, relying
instead on CO2 as an anti-oxidant. His wines are rarely racked, not fined
or filtered, and each barrel is bottled separately by hand. All the red wines
are aged in new oak barrels.
The house style is deeply colored with great aromatics, intense, ripe and
complex fruit flavors and a dense and rich, yet silky and elegant, feel on
the palate. Because of the high levels of CO2, his wines generally need several
years in bottle to open up and will age gracefully for many years. The 2000
vintage, as usual, is softer, riper and more forward.
